All great cuisine has regional origins, but it travels perfectly in the right hands. Living proof comes from Jaruphat Ploykeaw; despite spending all of her life in Thailand, she has collected garlands for Italian cooking throughout a 20-year career. Since joining the Da Vinci Restaurant at Rembrandt Hotel Bangkok in 2013, this much-praised Chef de Cuisine has proved indispensable. An avid reader and dedicated student, she achieved twin degrees from Rajamangala University and has since added multiple specialist qualifications in food and hospitality. Among her tutors was the distinguished chef/restaurateur from Turin, Alfredo Russo, and various maestros from the higher end of Thailand’s restaurant scene.
